From Marcos Sotoserrano, S.L., thanks to our continuous improvement in food safety, quality, process, raw materials and farms, we have given the necessary impetus to be able to improve our Iberico pig herd with the aim of obtaining excellent products from the quality, social, ethical, and environmental points of view. For the past few years we have been selecting farmers and working with them, this has enabled us to get to this point and the collaboration with Winterbotham Darby and CIWF has definitively been the challenge and encouragement we needed to achieve this.

Our ethical approach is to ensure that we DO NOT DEGRADE the traditional way Iberico pigs are handled where the animals can express their natural behaviours during their entire lives and can leverage all the natural resources from the land (dehesa). This way we can have a sustainable production, avoiding the degradation of the land by intensive farming. This traditional handling, as opposed to intensive livestock farming, allows us to demonstrate our ethical values which are so necessary in the Spanish Iberico pig sector.
